Roasted Savory and Garlic French Fries

Homemade french fries are an all time family favourite and after years of practice, I've discovered a few secrets to making perfectly crispy-on-the-outside and soft-on-the-inside fries. Following these steps may seem tedious but I promise it is well worth it.

1. Don't cut them too skinny
2. Soaking raw fries in ice cold water before baking helps to remove the starch from the potatoes
3. Dry the fries really well before seasoning to avoid extra steam while baking
4. Don't overcrowd the fries on the baking sheet and carefully turn each one half way through baking
5. Season with salt AFTER baking, as salt will draw out access moisture, which will cause your fries to be soggy

Ingredients:

2-3lb russet potatoes
3 Tbsp (45 ml) Farmer John’s Savory Garlic Oil
1 tsp (5 ml) Farmer John’s Savory Sea Salt

Method:

  1. Preheat oven to 400 F
  2. Slice potatoes into sticks, approximately 1/2" thick
  3. Soak fries in cold water for 10 minutes to remove starch and help with crispness when baking
  4. Drain water and dry fries well to remove access water and avoid steam when baking
  5. Toss fries with oil and spread evenly on parchment lined baking sheets. Do not crowd fries
  6. Bake for 20 minutes, turn fries and return to oven for an additional 20 minutes, or until they are golden brown 
  7. Remove from oven and season with Farmer John's Savory Sea Salt
  8. Serve immediately
