Spicy Roasted Vegetables

These roasted vegetables will give your plate a pop of colour and is a great way to use up the last bits of vegetables in your fridge. Adding a different vegetable each time is a great way to expose your children to something new while keeping things familiar. We like things spicy but feel free to adjust the heat by using less (or more) cayenne pepper.

Ingredients:

1 cup broccoli florets
1 cup cauliflower florets
1 cup bell pepper, chopped
1 cup cabbage, chopped
1 small red onion, chopped
3 Tbsp (30 ml) Farmer John's Savory Garlic Oil
1 tsp (5 ml) Farmer John's Summer Savory
1 tsp (5 ml) Farmer John's Organic Garlic
1/2 tsp (2.5 ml) Farmer John's Organic Cayenne Pepper

Method:

  1. Preheat oven to 425 F
  2. Toss vegetables in Farmer John's Savory Garlic Oil and season evenly with summer savory, garlic and cayenne pepper (adjust amount of cayenne pepper according to your desired level of heat)
  3. Spread vegetables in a single layer on a parchment lined baking sheet
  4. Roast, stirring once or twice, until vegetables are tender, approximately 20 minutes 

Approximate total time: 30 minutes
Serves: 4-6
