Parsley in an important member of the carrot family and an important herb globally. A slow starter in the field it proves to be very durable in the cool fall months. Two forms of parsley are used as herbs: curly leaf (P. crispum) and Italian, or flat leaf (P. neapolitanum). Curly leaf parsley is often used as a garnish and many dishes are served with fresh green chopped parsley sprinkled on top. The flat leaf is prefered in cooking due to its greater flavor and is normally used for dehydration.
