Butternut Squash Gratin

Ingredients:

1/4 cup, (60 g) Farmer John’s Savory Garlic Oil
2 Kg Butternut squash, peeled and sliced into thin slices
1 tsp (5 ml) Farmer John’s Savory Sea Salt
½ onion, peeled & sliced thinly
1 Tbsp (15 ml) Farmer John’s Organic Dried Garlic
1 Tbsp (15 ml) Farmer John’s Organic Thyme
1 Tbsp (15 ml) Farmer John’s Organic Rosemary
1 cup (150 g) aged cheese, grated
2/3 cup (160 ml) whipping cream
¼ tsp (2 ml) Farmer John’s Organic Nutmeg

Method:

  1. Preheat oven to 400°F and line a baking tray with parchment paper
  2. Place diced squash on tray and drizzle with Farmer John’s Savory garlic oil. Toss well to coat and season with Farmer John’s Savory Sea Salt.
  3. Bake for 20 minutes then add onion, garlic and herbs and continue to bake for another 25 minutes, or until squash is just tender. 
  4. Layer squash and cheese in a 2-litre (8-cup) ovenproof dish.
  5. Combine cream and nutmeg and pour over squash
  6. Bake gratin for 30 minutes or until golden and heated through.
  7. Serve warm

Serves: 4-6
